Hi Joel. Just a quick Q. I'm planning on making it for my family this Sunday for lunch. But the hubby is allergic to feta cheese. What other cheese would u recommend? I know it's silly to ask since it's a Greek version, but I love the addition of spinach and olives. Ur answer would be appreciated. Thank u in advance. Cheerios. 😁

Chef Joel … I LOVE all these ingredients together! I've bought the "sun dried" tomatoes that are already reconstituted in a jar, but how do you prep the dried ones in the bag, just soak in plain room temp water? Anna

Hey Recipe30, I have a dish you might like. Pound out chicken breast (after halving)..I like to season S/P and either herb de province/or Mexican spices, add thin slice of cheese (of your choice), then I add a pepper, usually the canned chili peppers…or if you have brown'd, skinned a bell pepper, then I place some crab cake mix in the middle (or ham, or a shrimp mix..etc). Roll the chicken, cheese, pepper goodness, dredge in egg and then panko (or my panko/coconut blender mix), tooth pick and bake for15-20 minutes. If the chicken is pounded thin, it should take too long to cook. OR you could add some enchilada/sour cream/salsa to the baking dish. Anyway, I would love to see your take on this:) GB

Love your post. The intro has style, you make a dish that can be easily made…and its not a 15-25 minutes tutorial.

Absolutely glorious! Fresh and bustling with flavours… and that grill pan with no long handle sticking out, is so darn practical. This episode was perfect all the way…👏👏👏
