We convinced Dishoom’s head chef Naved to share with you all his famous Indian Style Scrambled Egg recipe which we freaking love:
– 2 eggs
– 1 Indian onion
– 1 green chili
– 1 tbsp butter
– A few fresh coriander leaves
– 1 super soft bun split in half, toasted and buttered
– Pinch of salt
– Pinch of cumin
NOTE: Add a pinch of salt & pinch of cumin when scrambling your eggs for even more Indian flavor.
TIP: If you’re eating breakfast at Dishoom, they also offer free unlimited chai refills during breakfast time!
Finely dice the Indian onion and green chili. Throw the tablespoon of butter into a hot pan, then add the onion and chili. Immediately after, crack in your two eggs and sprinkle in the pinch of salt and cumin. Continuously stir the eggs for 2-3 mins to ensure you do not over cook them. Add the fresh leaves of coriander towards the very end. Serve with the warm, toasted and butter bun on the side and enjoy!
